This guide is for the simplest possible way to roast Mushrooms, with nothing but olive oil, salt, and pepper. Mushrooms are not only incredibly tasty, they are also a great source of protein, fiber, and antioxidants. Roasted Mushrooms are quick, simple, and absolutely delicious. When roasted, mushrooms come out meaty, juicy, and bursting with flavor! Roasted mushrooms make a great snack, side, or topping for salads and pastas. This recipe uses 4 ingredients for the simplest Roasted Mushrooms possible.
Roasted Mushrooms Variations
Mushrooms on their own with just a little bit of evoo, salt, and pepper make a perfect dish. However, there are countless ways to customize this dish and these are some of our favorites additions:
Mushrooms: This recipe works for a variety of mushrooms if baby bella’s are not available. Button, oyster, shiitake, wild mushrooms, and many more are all great. Use any mushrooms that are available!
Garlic: Garlic and mushrooms are a match made in heaven. Mix in minced garlic with the mushrooms about 10 minutes before they are done roasting.
Herbs: Add in some fresh thyme or rosemary at the beginning of the roasting process. Fresh herbs such as chopped parsley or chives can be added right after the mushrooms are done roasting. Follow the recipe exactly then mix in the fresh herbs at the very end.
Sauces: Lemon, balsamic vinegar, or soy sauce all make great additions as well. Lightly drizzle balsamic vinegar or soy sauce (or a mixture of both!) over the mushrooms at the beginning of the roasting process. Or after the mushrooms are all done roasting, squeeze some lemon juice over them.

Ingredients
- 8 oz Baby Bella Mushrooms see notes
- 3-4 tbsp Extra Virgin Olive Oil
- 2 tsp Salt
- 2 tsp Pepper
Instructions
- Preheat your oven to 420°
- Drizzle 2 tbsp of extra virgin olive oil all over the mushrooms, then shake the tray a little to make sure all mushrooms are coated well. Add salt and pepper.
- Bake for 40 minutes, giving the mushrooms a shake halfway through the cook time.
